Job Descriptions

Job Descriptions at this level will entail: –

  1. Developing and reviewing menus;
  2. Supervising food preparation (mise-en-place) and production;
  3. Maintaining stock items for production;
  4. Receiving produce as per specifications;
  5. Forecasting food production needs;
  6. Maintaining food production records;
  7. Monitoring work orders on equipment;
  8. Taking stock of the food stores; and
  9. Supervising staff working under the officer.

Job Specifications

For appointment to this grade, an officer must have: –

  1. At least nine (9) years cumulative relevant work experience, three (3) at the grade of Chef I or in a comparable position;
  2. Diploma in either pastry and bakery, culinary art, food production (both mass food production and a lar carte) or equivalent qualification from a recognized institution;
  3. Certificate of medical examination in line with the Food, Drugs and Chemical Substance Act;
  4. Certificate in Supervisory Skills Course lasting not less than two (2) weeks from a recognized institution;
  5. Proficiency in computer applications; and
  6. Shown merit and ability as reflected in work performance and results.
